Spinach Rotini

Ingredients
- 1 lb pasta, rotini, whole grain
- 10 oz spinach, raw, chopped
- 1 Tbsp olive oil
- 5 garlic cloves
- 1 bell pepper, diced
- 1 tomato, diced
- ¼ c mozzarella cheese, part skim, shredded
- 3 Tbsp parsley, chopped
- 2 Tbsp basil pesto
Method

Bring a large pot of water to boil and add pasta.

Add pasta and cook for 8-10 minutes or until al dente. Drain.

In a large saute pan, heat olive oil over medium heat.

Add garlic, peppers, tomatoes, and spinach to saute pan.

Cook for 5 minutes.

Add in pasta. Then add in pesto.

Toss in parsley.

Spread cheese on top and serve.
