Spinach Rotini

Spinach Rotini

This is a family and CACFP recipe for spinach and fresh herbs.

Ingredients

  • 1 lb pasta, rotini, whole grain
  • 10 oz spinach, raw, chopped
  • 1 Tbsp olive oil
  • 5 garlic cloves
  • 1 bell pepper, diced
  • 1 tomato, diced
  • ¼ c mozzarella cheese, part skim, shredded
  • 3 Tbsp parsley, chopped
  • 2 Tbsp basil pesto

Method

Bring a large pot of water to boil and add pasta.

Add pasta and cook for 8-10 minutes or until al dente. Drain.

In a large saute pan, heat olive oil over medium heat.

Add garlic, peppers, tomatoes, and spinach to saute pan.

Cook for 5 minutes.

Add in pasta. Then add in pesto.

Toss in parsley.

Spread cheese on top and serve.
