Radish Pink Dip

This is the perfect way to interest young children in radishes! 
This is a family and CACFP spring and autumn recipe for local radish and dairy.

Ingredients

  • 1 bunch fresh radishes
  • 8 oz package cream cheese softened
  • 1/4 c low-fat Greek yogurt
  • 1 Tbsp Italian Seasoning
  • 2 tsp minced garlic
  • 1/2 tsp salt
  • 2-3 fresh Basil leaves finely chopped

Method

Preheat the oven to 375. Line a sheet pan with parchment paper.

Remove radish stems, wash and quarter radishes.

Lay radishes on baking sheet and bake 20-25 minutes until they start to turn translucent and feel soft when you poke them with a fork.

Using a food processor or blender combine cream cheese and cooled radish chunks.

Add yogurt until you achieve the desired consistency you wish. Add seasonings and stir well.
