Bountiful Harvest Salad w/ Fresh Apple Vinaigrette

BOUNTIFUL HARVEST SALAD W/ FRESH APPLE VINAIGRETTE

A light salad bursting with flavor from a tasty homemade apple vinaigrette!
This is a summer and autumn school food service recipe for Apples, Lettuce, Honey, and Cranberries.

Ingredients

Fresh Apple Vinaigrette

  • 10 oz Apple Cider Vinegar
  • 33¾ oz Apples, fresh, Gala 125-138 ct, cored peeled & chopped
  • 1 cup Honey, local pure
  • 2 cups Oil, olive or canola
  • ½ tsp Salt
  • ½ tsp Pepper, black

Salad

  • 3 lbs 2 oz Romaine lettuce, chopped
  • 4 lbs 7 oz Red Leaf lettuce, torn into smaller pieces
  • 6 lbs 8 oz Apples, fresh Gala, cored and chopped ½ inch- skin on
  • ½ cup Lemon Juice, fresh
  • 3 lbs 10 oz Cranberries, dried sweetened
  • 8 oz Cheddar, USDA reduced fat, shredded

Method

For the dressing: combine vinegar, apple pieces, and honey in a blender or food processor and blend to mix. After apples have pureed, slowly add oil in a slow stream while blending to incorporate.

Add salt and pepper. Taste for seasonings, adjusting if too tart or too sweet.

CCP: Store at a minimum of 41* F until ready to use.

After chopping apples, toss the apples with the lemon juice to coat. Set aside.

Combine the lettuces, tossing to mix, in a large tub.

Toss lettuces with dressing to coat. Layer evenly in 4 hotel pans.

Add each ingredient to the pans: chopped apples, cranberries and cheddar. Be sure to place equal amounts in each hotel pan.

CCP: Hold at a minimum of 41 F through service.

This recipe is a celebration of a school favorite- the apple! Fresh apple cider vinaigrette adds a vibrant note to mixed greens, and the dried cranberries add a sweet finish to this tasty salad!
