Ingredients
- 3 lbs 10 ounces local apples
- 6 ounces fresh or frozen cranberries
- 1 cup water
- 1/3 cup brown sugar
- 2 Tbsp lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp salt
Method

Peel, core and chop apples.

Combine all ingredients in a large stock pot or kettle. Bring to a boil, then lower heat to a simmer. Cover and simmer for 20-30 minutes.

Remove from heat and let cool slightly. Use a potato masher to mash until desired consistency: chunky or smooth.

Serve at 135 degrees if serving warm. Or, cool to 41 degrees within 4 hours. Serve cold at 41 degrees.
