CREAMY FRESH COLE SLAW
This recipe elevates a classic vegetable dish with a delicious, and easy to make homemade dressing.
This is a summer and autumn school food service recipe for Cabbage, Bell Peppers, and Carrots.

Ingredients
- 7 lbs 6 oz Green cabbage, shredded and chilled
- 5 oz Green Bell Peppers, diced
- 12 oz Carrots, shredded
- 1 lb 12 oz Reduced Cal Salad Dressing OR Low Fat Mayo
- ¼ cup White Wine Vinegar
- ¼ cup Sugar, white
- 1 T 1 tsp Celery Seed, ground
- 2 tsp Dry Mustard
Method
Drain cold, shredded cabbage of any accumulated liquid. Place cabbage, peppers and carrots in a large bowl; toss together.
Combine salad dressing or mayo, sugar, celery seed, dry mustard and vinegar in a separate bowl.
Pour mayo mixture over vegetables. Mix thoroughly.
Spread 5 lbs, 3 oz (approx. 3 qt, ½ c) into a shallow (12x20x2 ½ inch) pan to a product depth of 2″ or less. For 50 servings, use 1 pan. For 100 servings, use 2 pans.
CCP: Cool to 41 F or lower within 4 hours.
Cover and refrigerate until service.
Mix lightly before serving.
For best results, shred cabbage, store overnight, drain, and add dressing just prior to service. If the full recipe is prepared in advance, the yield will be reduced!
